Ian Tice’s Civiche

 

1 poblano or other mild pepper
1 yellow or vidalia onion
1 jalepeno (seeds and white membrane removed)
1 yellow or red pepper
.5 cp chopped cilantro
juice of 2 lemons
2oz oil
salt and pepper to taste
your choice of seafood; shrimp , grouper, crab, scallops, tuna, calimari all work well.
 
dice and mix all ingredients, refridgerate at least 6 hours.
 
garden pepper cream sauce:
1 jalepeno diced
1 poblano or serrano roasted and remove blackened skin
1 sprig thyme
1 garlic clove
1 shallot
1 cp white wine
5 peppercorns
2cp heavy cream
 
add all ing. except cream, reduce wine by half add cream reduce by half. salt and pepper to taste.
goes well with chicken or richer seafood.
